Ingredients
4 medium sweet potatoes
1 tablespoon olive oil
1 red bell pepper, diced
1 onion, diced
3 garlic cloves, minced
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon smoked paprika
1/4 cup crumbled feta cheese
2 tablespoons chopped fresh parsley
Salt and black pepper to taste
Instructions
1. Preheat the oven to 400°F (200°C).
2. Wash the sweet potatoes and prick them several times with a fork. Place the potatoes on a baking sheet and bake for 45-55 minutes, or until tender when pierced with a fork.
3. In a skillet, heat the olive oil over medium heat. Add the diced bell pepper and onion, and sauté for 5-7 minutes, or until softened.
4. Add the minced garlic, cumin, oregano, and smoked paprika. Cook for an additional 2 minutes, stirring constantly, until the spices are fragrant.
5. Carefully slice the baked sweet potatoes in half lengthwise. Scoop out the flesh, leaving a thin layer of sweet potato attached to the skin to create a boat-like shape.
6. In a bowl, mash the scooped-out sweet potato flesh. Add the sautéed vegetable mixture and stir to combine.
7. Spoon the sweet potato mixture back into the potato skins, then top with the crumbled feta cheese and chopped parsley.
8. Return the stuffed sweet potatoes to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and lightly golden.
9. Serve hot and enjoy!
Notes
For a spicier version, add a pinch of cayenne pepper or crushed red pepper flakes to the filling. You can also experiment with different cheese varieties, such as goat cheese or shredded mozzarella.
