Ingredients
– 10 oz fresh spinach, chopped
– 8 oz crumbled feta cheese
– 2 eggs, beaten
– 1/4 cup all-purpose flour
– 1/4 cup panko breadcrumbs
– 1 tsp dried oregano
– 1/4 tsp red pepper flakes
– Salt and pepper to taste
Instructions
1. – Preheat oven to 400°F and line a baking sheet with parchment paper.
2. – In a large bowl, combine the chopped spinach, feta cheese, beaten eggs, flour, panko, oregano, red pepper flakes, salt, and pepper. Mix well.
3. – Scoop the mixture by the tablespoon and place on the prepared baking sheet, flattening each into a round crisp.
4. – Bake for 12-15 minutes, or until the edges are golden brown and crispy.
5. – Serve warm and enjoy!
Notes
