Ingredients
– 2 cups all-purpose flour
– 1/2 cup unsweetened cocoa powder
– 1 teaspoon baking soda
– 1/4 teaspoon salt
– 1/2 cup unsalted butter, softened
– 1 cup granulated sugar
– 1 egg
– 1 teaspoon vanilla extract
– 1 cup miniature marshmallows
Instructions
1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
3. In a large bowl, beat the butter and sugar until light and fluffy, about 2-3 minutes. Beat in the egg and vanilla.
4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the marshmallows.
5. Scoop the dough by the tablespoonful onto the prepared baking sheet, spacing them about 2 inches apart.
6. Bake for 8-10 minutes, or until the edges are set and the centers are still slightly soft.
7. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For a more intense chocolate flavor, use dark cocoa powder. You can also add a sprinkle of crushed peppermint or a drizzle of melted chocolate on top of the cookies.
