Description

Maple Dijon Roasted Apples & Carrots are a delightful, easy-to-make side dish that’s perfect for any occasion. The tender, caramelized vegetables are tossed in a sweet and tangy sauce for a flavor-packed, nutritious side.


Ingredients

– 3 medium apples, cored and cut into wedges

– 6 medium carrots, peeled and cut into 1-inch pieces

– 2 tablespoons olive oil

– 2 tablespoons maple syrup

– 2 tablespoons Dijon mustard

– 1 teaspoon garlic powder

– 1/2 teaspoon ground cinnamon

– 1/4 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. Preheat oven to 400°F (200°C).

2. In a large bowl, combine the apple wedges and carrot pieces.

3. In a small bowl, whisk together the olive oil, maple syrup, Dijon mustard, garlic powder, cinnamon, salt, and pepper.

4. Pour the maple Dijon sauce over the vegetables and toss to coat evenly.

5. Spread the coated vegetables in a single layer on a large baking sheet.

6. Roast for 18-20 minutes, stirring halfway, until the vegetables are tender and lightly caramelized.

7. Serve hot as a side dish.

Notes

This recipe can be easily doubled or tripled to serve a crowd. For a more savory version, try adding a pinch of dried thyme or rosemary. The roasted veggies also make a great topping for salads or grain bowls.
