Description

Juicy, tender chicken glazed in a sweet and savory maple bourbon sauce, topped with crunchy toasted pecans. This easy weeknight meal is ready in just 30 minutes!


Ingredients

– 1 pound boneless, skinless chicken thighs

– 2 tablespoons olive oil

– 1/4 cup bourbon

– 1/4 cup maple syrup

– 2 cloves garlic, minced

– 1 teaspoon dried thyme

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper

– 1/2 cup chopped pecans


Instructions

1. Preheat oven to 400°F.

2. In a large oven-safe skillet, heat the olive oil over medium-high heat.

3. Season the chicken thighs with salt and pepper, then sear them in the hot oil for 3-4 minutes per side until golden brown.

4. In a small bowl, whisk together the bourbon, maple syrup, garlic, and thyme.

5. Pour the bourbon-maple mixture over the seared chicken and bring to a simmer.

6. Transfer the skillet to the oven and bake for 15-18 minutes, until the chicken is cooked through.

7. Remove the skillet from the oven and sprinkle the chopped pecans over the chicken.

8. Broil for 2-3 minutes until the pecans are toasted.

9. Serve the Maple Bourbon Pecan Chicken immediately, spooning the sauce over the top.

Notes

For best results, use boneless, skinless chicken thighs as they stay juicier than breasts. You can also use chicken breasts, but adjust the cooking time as needed. The pecans can be toasted in advance for extra crunch.
