Ingredients
– 1 lb ground beef
– 4 slices thick-cut bacon
– 1 cup all-purpose flour
– 1 tablespoon white sugar
– 2 teaspoons baking powder
– 1/2 teaspoon salt
– 1 cup milk
– 2 tablespoons maple syrup
– 1 egg
– 2 tablespoons unsalted butter, divided
Instructions
1. – Preheat a grill or griddle to medium-high heat.
2. – Form the ground beef into 4 equal-sized patties, seasoning with salt and pepper.
3. – Cook the bacon in a skillet until crispy, then drain on paper towels.
4. – In a large bowl, whisk together the flour, sugar, baking powder, and salt. Stir in the milk, maple syrup, and egg until just combined (do not overmix).
5. – Melt 1 tablespoon of butter on the preheated grill/griddle. Pour batter by 1/4 cup portions and cook until bubbles appear on the surface, about 2-3 minutes. Flip and cook for an additional 1-2 minutes until golden brown.
6. – Cook the beef patties on the grill/griddle until cooked through, about 4-5 minutes per side.
7. – Assemble the burgers by placing a beef patty on a pancake, topping with 1-2 slices of crispy bacon, and finishing with another pancake.
8. – Serve warm, drizzling with additional maple syrup if desired.
