Ingredients
– 2 cups all-purpose flour
– 2 teaspoons baking powder
– 1/2 teaspoon salt
– 2 tablespoons granulated sugar
– 1 1/2 cups milk
– 2 eggs
– 2 tablespoons unsalted butter, melted
– 1 cup diced fresh mango
Instructions
1. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
2. In a separate bowl, whisk together the milk, eggs, and melted butter.
3. Pour the wet ingredients into the dry ingredients and stir just until combined (do not overmix).
4. Fold in the diced mango.
5. Heat a lightly oiled griddle or nonstick pan over medium heat.
6. Scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
7. Cook for 2-3 minutes per side, or until golden brown.
8. Serve the Mango Pancakes warm, with your desired toppings like fresh mango slices, whipped cream, and a drizzle of maple syrup.
Notes
For extra flavor, you can add a teaspoon of vanilla extract to the batter. To make the pancakes extra fluffy, separate the eggs and fold in the whipped egg whites at the end. Leftover pancakes can be stored in the refrigerator for up to 3 days, or frozen for up to 2 months.
