Description

Ingredients

– 1 pound elbow macaroni

– 4 tablespoons unsalted butter

– 4 tablespoons all-purpose flour

– 3 cups whole milk

– 2 cups heavy cream

– 2 cups shredded cheddar cheese

– 1 cup shredded Gruyère cheese

– 1 pound cooked lobster meat, chopped into bite-sized pieces

– 1 teaspoon salt

– 1/2 teaspoon freshly ground black pepper


Instructions

1. Bring a large pot of salted water to a boil. Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

2. In a large saucepan, melt the butter over medium heat. Whisk in the flour and cook for 2-3 minutes, stirring constantly, to make a roux.

3. Gradually whisk in the milk and heavy cream. Bring the mixture to a simmer and cook, stirring occasionally, until thickened, about 5-7 minutes.

4. Remove the saucepan from the heat and stir in the cheddar and Gruyère cheeses until melted and smooth.

5. Add the cooked macaroni and lobster meat to the cheese sauce, and stir to combine. Season with salt and pepper.

6. Transfer the lobster mac and cheese to a baking dish and bake at 375°F for 15-20 minutes, or until the top is golden and bubbly.

7. Serve hot and enjoy!

Notes

For an extra crispy topping, sprinkle the top of the mac and cheese with panko breadcrumbs before baking. You can also add a splash of white wine or sherry to the cheese sauce for an extra layer of flavor.
