Description
These Loaded Bacon Jalapeño Mac & Cheese Cupcakes are the ultimate party or game day treat! Creamy mac and cheese is baked in a cupcake tin and topped with crispy bacon and spicy jalapeños for an irresistible flavor explosion.
Ingredients
– 8 oz elbow macaroni
– 2 tbsp butter
– 2 tbsp all-purpose flour
– 2 cups milk
– 2 cups shredded cheddar cheese
– 1/2 cup crumbled bacon
– 2 jalapeños, diced
– 1/4 tsp salt
– 1/8 tsp black pepper
Instructions
1. – Preheat oven to 375°F. Grease a 12-cup muffin tin.
2. – Cook the macaroni according to package instructions. Drain and set aside.
3. – In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute.
4. – Gradually whisk in the milk and cook until thickened, about 5 minutes.
5. – Remove from heat and stir in the cheddar cheese until melted and smooth.
6. – Fold in the cooked macaroni, bacon, jalapeños, salt, and pepper.
7. – Scoop the mac and cheese mixture evenly into the prepared muffin cups.
8. – Bake for 15-18 minutes, until the tops are lightly golden.
9. – Let cool for 5 minutes before removing from the tin.
10. – Serve warm and enjoy!
Notes
For extra spice, use pepper jack cheese instead of cheddar. You can also top the cupcakes with additional crumbled bacon and jalapeños.
