Ingredients
– 2 cups brown lentils, rinsed
– 1 tablespoon olive oil
– 1 yellow onion, diced
– 3 cloves garlic, minced
– 2 teaspoons ground cinnamon
– 1/2 cup brown sugar
– 4 cups vegetable broth
– Salt and black pepper to taste
– Chopped fresh parsley for garnish
Instructions
1. In a large pot or Dutch oven, heat the olive oil over medium heat.
2. Add the diced onion and minced garlic. Sauté for 3-5 minutes until the onion is translucent.
