Description

These Lemon Oatmeal Crumble Bars are a quick and delightful treat with a zesty lemon filling and irresistible oat crumble topping.


Ingredients

– 1 cup all-purpose flour

– 1 cup old-fashioned oats

– 3/4 cup brown sugar

– 1/2 cup unsalted butter, softened

– 1/4 tsp salt

– 1 (14 oz) can sweetened condensed milk

– 1/3 cup lemon juice

– 1 tbsp lemon zest


Instructions

1. 1. Preheat oven to 350°F. Grease an 8×8-inch baking pan.

2. 2. In a medium bowl, mix together the flour, oats, brown sugar, butter, and salt until crumbly.

3. 3. Press half of the oat mixture into the prepared pan.

4. 4. In a small bowl, whisk together the sweetened condensed milk, lemon juice, and lemon zest.

5. 5. Pour the lemon mixture over the crust in the pan.

6. 6. Sprinkle the remaining oat mixture evenly over the top.

7. 7. Bake for 25-30 minutes, until lightly golden.

8. 8. Allow to cool completely before cutting into bars.

Notes

Store leftover bars in the refrigerator for up to 5 days. For a brighter lemon flavor, increase the lemon zest to 2 tablespoons.
