Description

Ingredients

– 1 cup brown lentils, rinsed

– 4 cups vegetable or chicken broth

– 1 onion, diced

– 3 cloves garlic, minced

– 2 tablespoons olive oil

– 2 tablespoons freshly squeezed lemon juice

– 1 teaspoon ground cumin

– 1/2 teaspoon ground coriander

– 1/4 teaspoon cayenne pepper (optional)

– Salt and black pepper to taste

– Chopped fresh parsley for garnish


Instructions

1. In a large pot, heat the olive oil over medium heat.

2. Add the diced onion and sauté for 3-4 minutes, until translucent.

3. Stir in the minced garlic and cook for an additional minute, until fragrant.

4. Add the rinsed lentils and broth to the pot. Bring the mixture to a boil.

5. Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the lentils are tender.

6. Remove from heat and stir in the lemon juice, cumin, coriander, and cayenne (if using). Season with salt and black pepper to taste.

7. Ladle the soup into bowls and garnish with chopped fresh parsley.

Notes

For a creamier texture, use an immersion blender to partially purée the soup. You can also add diced tomatoes, chopped spinach, or cooked rice for extra heartiness.
