Ingredients
– 2 cups whole milk
– 1 cup heavy cream
– 1/2 cup honey
– 2 tablespoons dried lavender buds
– 1 teaspoon vanilla extract
– 2 teaspoons unflavored gelatin powder
Instructions
1. In a medium saucepan, combine the milk, cream, and honey. Heat over medium, stirring frequently, until the mixture just begins to simmer.
2. Remove from heat and stir in the dried lavender buds. Cover and let steep for 30 minutes.
3. Strain the infused cream mixture through a fine-mesh sieve, discarding the lavender buds.
4. In a small bowl, sprinkle the gelatin over 2 tablespoons of cold water. Let stand for 5 minutes to bloom.
5. Return the strained cream mixture to the saucepan and heat over medium, stirring constantly, until the gelatin is fully dissolved, about 2-3 minutes.
6. Pour the panna cotta mixture into individual ramekins or a serving dish. Refrigerate for at least 4 hours or until set.
7. When ready to serve, top with a drizzle of honey and a sprig of fresh lavender, if desired.
Notes
For a thicker panna cotta, use 2 1/2 teaspoons of gelatin. The panna cotta can be made up to 3 days in advance and kept chilled until ready to serve.
