Indulge in the delicious flavors of a Reuben sandwich with these easy-to-make Keto Crispy Reuben Roll-Ups. Packed with savory corned beef, tangy sauerkraut, and melty Swiss cheese, these bite-sized appetizers are the perfect low-carb treat.
Ingredients
– 1 sheet low-carb, keto-friendly puff pastry
– 8 ounces thinly sliced corned beef
– 1 cup sauerkraut, drained
– 4 ounces shredded Swiss cheese
– 1 egg, beaten
– 2 tablespoons caraway seeds (optional)
Instructions
1. Preheat your oven to 400°F (200°C).
2. Roll out the puff pastry sheet on a lightly floured surface into a large rectangle, about 12×16 inches.
3. Arrange the corned beef slices in a single layer down the center of the pastry, leaving a 2-inch border on each side.
4. Top the corned beef with the sauerkraut, followed by the shredded Swiss cheese.
5. Fold the long sides of the pastry over the filling, overlapping in the center. Pinch the seams to seal.
6. Cut the roll into 8-10 individual roll-ups and place them seam-side down on a parchment-lined baking sheet.
7. Brush the tops of the roll-ups with the beaten egg and sprinkle with caraway seeds, if using.
8. Bake for 18-22 minutes, or until the pastry is golden brown and the cheese is melted.
9. Serve the Keto Crispy Reuben Roll-Ups warm, with a side of Russian dressing or thousand island dressing for dipping.
Notes
For a crispier exterior, you can bake the roll-ups on a wire rack set over a baking sheet. If you prefer, you can also use thinly sliced pastrami instead of corned beef.
