Ingredients

– 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces

– 2 tablespoons vegetable oil

– 1 onion, diced

– 3 cloves garlic, minced

– 2 tablespoons Jamaican curry powder

– 1 teaspoon ground allspice

– 1 teaspoon ground ginger

– 1 teaspoon paprika

– 1 cup coconut milk

– 1 cup chicken broth

– 1 tablespoon brown sugar

– Salt and black pepper to taste

– Chopped fresh cilantro for garnish


Instructions

1. In a large skillet, heat the vegetable oil over medium-high heat.

2. Add the diced onion and sauté for 2-3 minutes until translucent.

3. Add the minced garlic and sauté for an additional 1 minute.

4. Stir in the Jamaican curry powder, allspice, ginger, and paprika. Cook for 1 minute, stirring constantly, to toast the spices.

5. Add the chicken pieces and toss to coat with the spice mixture.

6. Pour in the coconut milk and chicken broth. Stir in the brown sugar and season with salt and black pepper to taste.

7. Bring the mixture to a simmer and cook for 15-20 minutes, or until the chicken is cooked through and the sauce has thickened.

8. Serve the Jamaican Curry Chicken over steamed rice, garnished with chopped fresh cilantro.

Notes

For a spicier version, you can add a diced Scotch bonnet or habanero pepper along with the other ingredients. The curry powder can also be adjusted to your desired level of heat. This dish pairs well with steamed rice, roti, or Jamaican rice and peas.
