Description

Indulge in the delightfully crunchy and flavor-packed Jalapeño Peanut Brittle! This spicy-sweet treat is the perfect snack, hostess gift, or holiday treat.


Ingredients

– 1 cup white sugar

– 1/2 cup light corn syrup

– 1/4 cup unsalted butter

– 1/4 teaspoon baking soda

– 1 cup roasted, salted peanuts

– 2 tablespoons finely chopped jalapeño peppers (seeds and membranes removed for less heat, if desired)


Instructions

1. Line a baking sheet with parchment paper or a silicone baking mat. Set aside.

2. In a medium saucepan, combine the sugar and corn syrup. Cook over medium heat, stirring constantly, until the mixture comes to a boil.

3. Continue cooking, without stirring, until the mixture reaches 300°F on a candy thermometer, about 5-7 minutes.

4. Remove the pan from the heat and immediately stir in the butter and baking soda. The mixture will foam up.

5. Quickly stir in the peanuts and chopped jalapeños until well combined.

6. Pour the brittle mixture onto the prepared baking sheet, spreading it out into an even layer.

7. Allow the brittle to cool completely, about 30 minutes. Once cooled, break the brittle into pieces.

Notes

– For a less spicy version, use fewer jalapeños or omit the seeds and membranes.

– Store the Jalapeño Peanut Brittle in an airtight container at room temperature for up to 2 weeks.
