Ingredients

– 1 pound Italian sausage, casings removed

– 1 onion, diced

– 3 cloves garlic, minced

– 4 cups chicken broth

– 2 cups heavy cream

– 3 medium russet potatoes, peeled and cubed

– 4 cups chopped kale

– 1 teaspoon dried thyme

– Salt and black pepper to taste


Instructions

1. Preheat oven to 375°F.

2. In a large skillet, cook the Italian sausage over medium-high heat, breaking it up as it cooks, until browned, about 5-7 minutes.

3. Add the diced onion and minced garlic to the skillet and cook for 2-3 minutes, until fragrant.

4. Pour in the chicken broth and heavy cream. Stir in the cubed potatoes, chopped kale, and dried thyme. Season with salt and black pepper to taste.

5. Transfer the mixture to a 9×13-inch baking dish.

6. Bake for 30-35 minutes, until the potatoes are tender and the top is lightly browned.

7. Let cool for 5 minutes before serving.

Notes

For a richer flavor, you can use Italian hot sausage instead of mild. To make it vegetarian, substitute the sausage with diced portobello mushrooms and use vegetable broth instead of chicken.
