Ingredients
– 1 lb Italian sausage, sliced into 1-inch pieces
– 2 bell peppers, sliced
– 1 onion, sliced
– 2 tbsp olive oil
– 1 tsp dried oregano
– 1/2 tsp garlic powder
– 1/4 tsp red pepper flakes (optional)
– Salt and black pepper to taste
Instructions
1. – In a large skillet, heat the olive oil over medium-high heat.
2. – Add the sliced sausage and cook for 3-4 minutes, until starting to brown.
3. – Add the sliced bell peppers and onions to the pan. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender and the sausage is cooked through.
4. – Season with oregano, garlic powder, red pepper flakes (if using), salt, and black pepper.
5. – Serve hot, over pasta, rice, or with crusty bread.
Notes
For a spicier version, use hot Italian sausage. You can also add sliced mushrooms or other vegetables to the mix. Leftovers can be stored in the refrigerator for up to 3 days.
