Ingredients

– 2 tablespoons olive oil

– 1 large onion, diced

– 3 carrots, peeled and sliced

– 3 celery stalks, sliced

– 4 cloves garlic, minced

– 8 cups chicken or vegetable broth

– 2 cups shredded cooked chicken (optional)

– 1 cup small pasta (such as ditalini or orzo)

– 2 teaspoons dried thyme

– 1 teaspoon dried oregano

– Salt and pepper to taste

– Fresh parsley, for garnish


Instructions

1. In a large pot, heat the olive oil over medium heat.

2. Add the onion, carrots, and celery. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened.

3. Add the garlic and cook for 1 minute, until fragrant.

4. Pour in the broth and bring to a boil. Reduce heat and simmer for 10 minutes.

5. Add the chicken (if using) and pasta. Simmer for an additional 10-12 minutes, or until the pasta is tender.

6. Stir in the thyme, oregano, salt, and pepper. Taste and adjust seasonings as needed.

7. Ladle the soup into bowls and garnish with fresh parsley.

Notes

This soup can be made vegetarian by using vegetable broth and omitting the chicken. For a heartier meal, serve with crusty bread or a side salad.
