Ingredients
– 2 cups all-purpose flour
– 1 cup unsalted butter, softened
– 1/2 cup granulated sugar
– 1 egg
– 1 teaspoon vanilla extract

– 2 cups chopped walnuts
– 1/2 cup granulated sugar
– 1 teaspoon ground cinnamon
Instructions
1. – In a large bowl, cream together the butter and 1/2 cup sugar until light and fluffy.
2. – Beat in the egg and vanilla extract.
3. – In a separate bowl, whisk together the flour and salt.
4. – Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
5. – Divide the dough into two equal parts. Roll each part into a rectangle about 1/4 inch thick.
6. – In a small bowl, mix together the chopped walnuts, 1/2 cup sugar, and cinnamon.
7. – Spread the nut mixture evenly over the dough rectangles.
8. – Carefully roll up the dough, starting from the short side, to form a log.
9. – Slice the logs into 1-inch thick pieces and arrange on a parchment-lined baking sheet.
10. – Bake at 375°F for 15-18 minutes, or until the cookies are golden brown.
11. – Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For a crisper cookie, bake for an additional 2-3 minutes. Store the cookies in an airtight container at room temperature for up to 1 week.
