Ingredients

– 2 pounds boneless, skinless chicken breasts

– 1 head romaine lettuce, chopped

– 2 cups cherry tomatoes, halved

– 1 bell pepper, diced

– 1/2 red onion, thinly sliced

– 1 cup Italian dressing

– 1/2 cup grated parmesan cheese


Instructions

1. Preheat your oven to 400°F (200°C).

2. Place the chicken breasts on a baking sheet and season with salt and pepper.

3. Bake the chicken for 25-30 minutes, or until it’s cooked through and reaches an internal temperature of 165°F (75°C).

4. Allow the chicken to cool slightly, then shred it using two forks.

5. In a large salad bowl, combine the shredded chicken, chopped romaine lettuce, halved cherry tomatoes, diced bell pepper, and thinly sliced red onion.

6. Drizzle the Italian dressing over the salad and toss gently to coat.

7. Top the salad with the grated parmesan cheese.
