Ingredients

– 1 lb Brussels sprouts, trimmed and shredded

– 1 cup cherry tomatoes, halved

– 1/2 cup crumbled feta cheese

– 1/4 cup sliced red onion

– 1/4 cup toasted pine nuts

– 2 tbsp balsamic vinegar

– 2 tbsp olive oil

– 1 tsp Dijon mustard

– 1 tsp dried oregano

– Salt and pepper to taste


Instructions

1. – In a large bowl, combine the shredded Brussels sprouts, cherry tomatoes, feta cheese, red onion, and toasted pine nuts.

2. – In a small bowl, whisk together the balsamic vinegar, olive oil, Dijon mustard, and dried oregano. Season with salt and pepper.

3. – Drizzle the dressing over the salad and toss to coat evenly.

4. – Serve immediately or refrigerate until ready to enjoy.

Notes

This salad can be made ahead of time and stored in the refrigerator for up to 3 days. The dressing can be prepared separately and added just before serving to keep the Brussels sprouts crisp.
