Ingredients
– 2 cups diced zucchini
– 1 onion, diced
– 3 garlic cloves, minced
– 1 cup heavy cream
– 1/2 cup grated parmesan cheese
– 2 tablespoons olive oil
– 1 teaspoon dried basil
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
Instructions
1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 5 minutes, until translucent.
2. Add the minced garlic and sauté for an additional 1 minute, until fragrant.
3. Add the diced zucchini to the skillet and cook for 8-10 minutes, stirring occasionally, until the zucchini is tender.
4. Transfer the zucchini mixture to a blender or food processor. Add the heavy cream, parmesan cheese, dried basil, salt, and black pepper. Blend until smooth and creamy.
5. Return the sauce to the skillet and simmer for 5 minutes, stirring occasionally, to allow the flavors to meld.

Notes
