Description

Indulge in the comforting, moist, and flavorful Irish Tea Cake, a classic treat perfect for enjoying with a warm cup of tea.

Ingredients

– 2 cups all-purpose flour

– 1 cup granulated sugar

– 1 teaspoon baking powder

– 1/2 teaspoon salt

– 1/2 cup unsalted butter, softened

– 2 large eggs

– 1/2 cup milk

– 1 teaspoon vanilla extract

Instructions

1. 1. Preheat the oven to 350°F (175°C). Grease a 9-inch round baking pan.

2. 2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.

3. 3. In a separate bowl, beat the butter until creamy. Add the eggs, one at a time, beating well after each addition.

4. 4. Stir in the milk and vanilla extract until well combined.

5. 5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

6. 6. Pour the batter into the prepared baking pan and smooth the top.

7. 7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

8. 8. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For a richer flavor, you can add 1/2 cup of raisins or chopped walnuts to the batter. The cake can be stored in an airtight container at room temperature for up to 3 days.
