Ingredients

– 2 cups all-purpose flour

– 2 teaspoons baking powder

– 1/2 teaspoon salt

– 1/2 cup unsalted butter, softened

– 1 cup granulated sugar

– 2 large eggs

– 1 teaspoon vanilla extract

– 1 cup milk

– 1 cup chopped walnuts (optional)

– Cream Cheese Frosting:

– 8 ounces cream cheese, softened

– 1/2 cup unsalted butter, softened

– 3 cups powdered sugar

– 1 teaspoon vanilla extract

Instructions

1. – Preheat oven to 350°F. Grease and flour two 9-inch round cake pans.

2. – In a medium bowl, whisk together the flour, baking powder, and salt.

3. – In a large bowl, beat the butter and sugar until light and fluffy, about 2-3 minutes. Beat in the eggs one at a time, then stir in the vanilla.

4. – Alternate adding the flour mixture and milk to the butter mixture, mixing just until incorporated. Fold in the chopped walnuts, if using.

5. – Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, until a toothpick inserted in the center comes out clean.

6. – Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

7. – For the frosting, beat the cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla, mixing until well combined and fluffy.

8. – Spread the frosting between the two cake layers and on the top and sides of the cake.

9. – Refrigerate the cake for at least 2 hours before serving.

Notes

– For an extra special touch, sprinkle the top of the cake with chopped walnuts or shredded coconut.

– Store leftovers in the refrigerator for up to 5 days.
