Ingredients
– 1 pound carrots, peeled and sliced into 1/4-inch rounds
– 1 cup apple cider vinegar
– 1/2 cup honey
– 1 teaspoon crushed red pepper flakes
– 1 teaspoon salt
– 1/2 teaspoon black pepper
Instructions
1. In a medium saucepan, combine the apple cider vinegar, honey, crushed red pepper flakes, salt, and black pepper. Bring the mixture to a simmer, stirring occasionally, until the honey is fully dissolved.
2. Add the sliced carrots to the saucepan and stir to coat them evenly with the pickling liquid.
3. Remove the saucepan from heat and let the carrots cool to room temperature, about 30 minutes.
4. Transfer the pickled carrots and pickling liquid to a clean glass jar or airtight container. Refrigerate for at least 4 hours, or up to 2 weeks.
