Ingredients

– 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces

– 1/4 cup honey

– 2 tablespoons hot sauce (such as Frank’s RedHot)

– 2 tablespoons olive oil

– 1 red bell pepper, sliced

– 1 cup broccoli florets

– 2 cloves garlic, minced

– 1 cup cooked white rice

– 2 green onions, thinly sliced

– Salt and pepper to taste


Instructions

1. In a large bowl, combine the chicken, honey, and hot sauce. Toss to coat the chicken evenly.

2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through.

3. Add the bell pepper, broccoli, and garlic to the skillet. Cook for an additional 3-5 minutes, or until the vegetables are tender-crisp.

4. Serve the Hot Honey Chicken over the cooked white rice, topped with the sliced green onions. Season with salt and pepper to taste.

Notes

For extra heat, add more hot sauce to the honey mixture. You can also use different vegetables, such as carrots or snap peas, in place of the broccoli and bell pepper.
