Description

Ingredients

– 1 pound heirloom carrots, peeled and cut into 1-inch pieces

– 2 tablespoons yuzu juice

– 2 tablespoons honey

– 1 tablespoon olive oil

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. Preheat the oven to 400°F (200°C).

2. In a large bowl, combine the cut carrots, yuzu juice, honey, olive oil, salt, and black pepper. Toss until the carrots are evenly coated.

3. Spread the carrots in a single layer on a baking sheet lined with parchment paper.

4. Roast the carrots for 20-25 minutes, or until they are tender and caramelized, stirring halfway through.
