Ingredients
– 3 pounds mixed root vegetables (carrots, parsnips, beets, etc.), peeled and cut into 1-inch pieces
– 3 tablespoons olive oil
– 3 tablespoons honey
– 3 cloves garlic, minced
– 1 teaspoon dried thyme
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
Instructions
