Description

Indulge in the delectable combination of honey, juicy peaches, and creamy cream cheese with these irresistible cupcakes. Perfect for any occasion, from casual gatherings to special events.

Ingredients

– 2 cups all-purpose flour

– 1 teaspoon baking powder

– 1/2 teaspoon baking soda

– 1/4 teaspoon salt

– 1/2 cup unsalted butter, softened

– 1 cup granulated sugar

– 2 large eggs

– 1/2 cup honey

– 1 cup diced fresh peaches

– 8 ounces cream cheese, softened

– 1/2 cup unsalted butter, softened

– 3 cups powdered sugar

– 1 teaspoon vanilla extract

Instructions

1. 1. Preheat the oven to 350°F. Line a 12-cup muffin tin with paper liners.

2. 2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

3. 3. In a large bowl, cream the butter and sugar until light and fluffy, about 2-3 minutes. Beat in the eggs one at a time, then stir in the honey.

4. 4. Gradually fold the dry ingredients into the wet ingredients until just combined. Gently fold in the diced peaches.

5. 5. Scoop the batter into the prepared muffin cups, filling them about 3/4 full.

6. 6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool completely on a wire rack.

7. 7. In a large bowl, beat the cream cheese and butter until smooth and creamy. Gradually add the powdered sugar and vanilla, beating until light and fluffy.

8. 8. Pipe or spread the cream cheese frosting onto the cooled cupcakes. Refrigerate for at least 30 minutes before serving.

Notes

For a more pronounced peach flavor, you can add 1-2 teaspoons of peach extract to the batter. Cupcakes can be stored in an airtight container in the refrigerator for up to 5 days.
