Ingredients
– 2 medium acorn squash, halved and seeded
– 3 tbsp honey
– 2 tbsp olive oil
– 1 tsp salt
– 1/2 tsp black pepper
– 4 oz creamy goat cheese, crumbled
– 1/4 cup cranberry sauce
Instructions
1. 1. Preheat the oven to 400°F (200°C).
2. 2. Place the acorn squash halves, cut-side up, on a baking sheet. Drizzle with olive oil and season with salt and pepper.
3. 3. Roast the squash for 30-35 minutes, or until tender and lightly caramelized.
4. 4. Remove the squash from the oven and drizzle each half with 1-2 tablespoons of honey.
5. 5. Return the squash to the oven and roast for an additional 5-10 minutes, or until the honey has caramelized.
6. 6. Remove the squash from the oven and top each half with a generous amount of crumbled goat cheese.
7. 7. Drizzle the cranberry sauce over the top of the goat cheese.
