Tender roasted sweet potatoes, savory honey garlic sausage, and a delectable sauce come together in this easy, flavorful one-pan dinner.
Ingredients
– 2 lbs sweet potatoes, peeled and cubed
– 1 lb honey garlic sausage, sliced into 1-inch pieces
– 2 tbsp olive oil
– 3 cloves garlic, minced
– 2 tbsp honey
– 2 tbsp soy sauce
– 1 tsp dried thyme
– Salt and pepper to taste
Instructions
1. – Preheat oven to 400°F. Toss the sweet potato cubes with olive oil, salt, and pepper on a large baking sheet.
2. – Roast for 15 minutes, then add the sausage pieces and continue roasting for 10-15 minutes more, until the sweet potatoes are tender and the sausage is cooked through.
3. – In a small bowl, whisk together the garlic, honey, soy sauce, and thyme.
4. – Remove the pan from the oven and drizzle the honey garlic sauce over the sweet potatoes and sausage. Toss to coat.
5. – Serve immediately, garnished with fresh parsley if desired.
Notes
For extra flavor, try adding a pinch of red pepper flakes or a splash of apple cider vinegar to the sauce. This dish also reheats well for leftovers.
