Ingredients
– 2 cups heavy cream
– 1 cup whole milk
– 3/4 cup granulated sugar
– 2 teaspoons vanilla extract
– 1/4 teaspoon ground cinnamon
– 1/8 teaspoon ground nutmeg
– 2 cups diced fresh peaches
– 1/2 cup crumbled shortbread cookies
Instructions
1. In a medium saucepan, combine the heavy cream, milk, and 1/2 cup of the sugar. Heat over medium, stirring occasionally, until the sugar has dissolved and the mixture is steaming, about 5 minutes.
2. Remove from heat and stir in the vanilla, cinnamon, and nutmeg. Let cool completely.
3. In a separate bowl, toss the diced peaches with the remaining 1/4 cup of sugar. Let sit for 10 minutes to allow the juices to release.
4. Churn the cooled cream mixture in an ice cream maker according to the manufacturer’s instructions. During the last 5 minutes of churning, add the peach mixture and crumbled cookies.
5. Transfer the ice cream to a freezer-safe container and freeze for at least 2 hours before serving.
Notes
For a richer, more indulgent ice cream, you can use 3 cups of heavy cream and omit the milk. The peach cobbler swirl can also be made by folding in a peach compote or jam instead of the fresh peaches. To keep the ice cream scoopable, let it sit at room temperature for 5-10 minutes before serving.
