Juicy, flavorful Herbed Ricotta Stuffed Chicken Rolls are a delicious and easy-to-make weeknight dinner. Tender chicken breasts are pounded thin, filled with a creamy, herb-infused ricotta mixture, then baked to perfection.
Ingredients
– 4 boneless, skinless chicken breasts
– 1 cup ricotta cheese
– 1/2 cup grated Parmesan cheese
– 2 tablespoons chopped fresh parsley
– 2 tablespoons chopped fresh basil
– 2 cloves garlic, minced
– 1/4 teaspoon salt
– 1/4 teaspoon black pepper
Instructions
1. Preheat the oven to 375°F (190°C).
2. Place each chicken breast between two sheets of plastic wrap or parchment paper and pound them thin, about 1/4-inch thick.
3. In a medium bowl, mix together the ricotta, Parmesan, parsley, basil, garlic, salt, and pepper until well combined.
4. Spread the ricotta mixture evenly over the pounded chicken breasts. Carefully roll up the chicken breasts and secure them with toothpicks.
5. Place the stuffed chicken rolls in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).
6. Remove the toothpicks and serve the Herbed Ricotta Stuffed Chicken Rolls warm.
