Description

Ingredients

– 1 lb ground turkey or lean ground beef

– 1 onion, diced

– 3 cloves garlic, minced

– 1 jalapeño, seeded and diced (optional)

– 1 tbsp chili powder

– 1 tsp cumin

– 1 tsp oregano

– 1 tsp paprika

– 1/2 tsp salt

– 1/4 tsp black pepper

– 1 (15oz) can black beans, rinsed and drained

– 1 (15oz) can pinto beans, rinsed and drained

– 1 (15oz) can diced tomatoes

– 1 (15oz) can corn, drained

– 4 cups low-sodium chicken or vegetable broth

– Chopped cilantro, avocado, and lime wedges for serving


Instructions

1. 1. In a large pot or Dutch oven, cook the ground turkey or beef over medium-high heat until browned and crumbled, 5-7 minutes. Drain excess fat.

2. 2. Add the onion, garlic, and jalapeño (if using) to the pot. Cook for 2-3 minutes until softened.

3. 3. Stir in the chili powder, cumin, oregano, paprika, salt, and pepper. Cook for 1 minute to toast the spices.

4. 4. Add the black beans, pinto beans, diced tomatoes, corn, and broth. Bring the soup to a simmer and cook for 15-20 minutes, stirring occasionally, until heated through.

5. 5. Serve the Healthy Taco Soup warm, topped with chopped cilantro, avocado, and lime wedges.

Notes

For a spicier soup, leave some or all of the jalapeño seeds. You can also customize the protein, beans, or vegetables to your liking. Store any leftovers in an airtight container in the refrigerator for up to 4 days.
