Ingredients
– 1 lb boneless, skinless chicken breasts, diced
– 1/2 cup basil pesto
– 1 head romaine lettuce, leaves separated
– 1 tomato, diced
– 1/4 cup shredded mozzarella cheese
– Salt and pepper to taste
Instructions
1. – In a large skillet, cook the diced chicken over medium heat until fully cooked through, about 8-10 minutes.
2. – Remove the chicken from the heat and stir in the basil pesto until the chicken is evenly coated.
3. – To assemble the lettuce wraps, place a spoonful of the pesto chicken into the center of a romaine lettuce leaf.
4. – Top with diced tomatoes and shredded mozzarella cheese.
