Ingredients
– 1 pound fresh radishes, halved or quartered
– 2 tablespoons olive oil
– 3 cloves garlic, minced
– 1 teaspoon dried oregano
– 1 teaspoon dried thyme
– 1/2 teaspoon dried rosemary
– 1/4 teaspoon red pepper flakes (optional)
– Salt and black pepper to taste
– 2 tablespoons grated parmesan cheese (optional)
– 2 tablespoons fresh chopped parsley
Instructions
1. Preheat your oven to 400°F (200°C).
2. In a large bowl, toss the halved or quartered radishes with the olive oil, minced garlic, dried oregano, thyme, rosemary, and red pepper flakes (if using). Season with salt and black pepper to taste.
3. Spread the seasoned radishes in a single layer on a large baking sheet.
4. Roast the radishes in the preheated oven for 20-25 minutes, or until they are tender and lightly browned, stirring halfway through.
