Ingredients
– 1 lb boneless, skinless chicken breasts, cubed
– 2 medium zucchini, sliced
– 2 medium yellow squash, sliced
– 1 tbsp olive oil
– 1 tsp Italian seasoning
– 1/2 tsp garlic powder
– 1/4 tsp salt
– 1/4 tsp black pepper
Instructions
1. – Heat olive oil in a large skillet over medium-high heat.
2. – Add the cubed chicken and cook for 5-7 minutes, until no longer pink.
3. – Add the sliced zucchini and squash to the skillet. Season with Italian seasoning, garlic powder, salt, and pepper.
4. – Cook for an additional 10-12 minutes, stirring occasionally, until the vegetables are tender.

Notes
For extra flavor, try adding some grated Parmesan cheese or fresh chopped parsley at the end. You can also swap in other vegetables like bell peppers or onions.
