Description

Tender chicken, roasted sweet potatoes, and fluffy rice come together in this Healthy Chicken & Sweet Potato Rice Bowl. A delicious and balanced meal that’s perfect for busy weeknights.


Ingredients

– 1 lb boneless, skinless chicken breasts

– 2 medium sweet potatoes, peeled and diced

– 1 cup uncooked brown rice

– 1 tbsp olive oil

– 1 tsp garlic powder

– 1 tsp onion powder

– 1 tsp paprika

– Salt and pepper to taste


Instructions

1. 1. Preheat oven to 400°F. Toss the diced sweet potatoes with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, until tender.

2. 2. In a large pot, cook the brown rice according to package instructions.

3. 3. Season the chicken breasts with garlic powder, onion powder, paprika, salt, and pepper.

4. 4. Heat a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes per side, until cooked through.

5. 5. Slice or dice the cooked chicken.

6. 6. To assemble the bowls, divide the rice, roasted sweet potatoes, and chicken evenly among 4 serving bowls.

Notes

For extra flavor, you can drizzle the bowls with a sauce like chimichurri or sriracha mayo. This recipe is also great for meal prep – the components can be made ahead of time and assembled when ready to serve.
