Ingredients
– 2 cups all-purpose flour
– 1 1/2 teaspoons baking powder
– 1/2 teaspoon salt
– 1/2 cup unsalted butter, softened
– 1 1/4 cups granulated sugar
– 3 large eggs
– 1 cup guava puree
– 1 teaspoon vanilla extract
Instructions
1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round baking pan.
2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
3. In a large bowl, cream the butter and sugar together until light and fluffy, about 2-3 minutes.
4. Add the eggs one at a time, beating well after each addition. Then stir in the guava puree and vanilla extract.
5. Gradually fold the dry ingredients into the wet ingredients until just combined, being careful not to overmix.
6. Pour the batter into the prepared baking pan and smooth the top.
7. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
8. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.
Notes
For a creamier texture, you can add a dollop of whipped cream or a scoop of vanilla ice cream on top. This cake can also be made in advance and stored in an airtight container for up to 3 days.
