Ingredients

– 2 pounds Yukon Gold potatoes, peeled and diced

– 8 cloves garlic, minced

– 1 large onion, diced

– 4 cups chicken or vegetable broth

– 1 cup heavy cream

– 2 teaspoons dried thyme

– 1 teaspoon salt

– 1/2 teaspoon black pepper


Instructions

1. In a large pot, sauté the minced garlic and diced onion in a bit of olive oil over medium heat until softened and fragrant, about 5 minutes.

2. Add the diced potatoes, chicken or vegetable broth, dried thyme, salt, and pepper. Bring the mixture to a boil, then reduce the heat and simmer for 15-20 minutes, until the potatoes are tender.

3. Using an immersion blender, carefully blend the soup until smooth and creamy. Alternatively, you can transfer the soup to a standard blender and blend in batches.

4. Stir in the heavy cream and heat through, about 2-3 minutes. Taste and adjust seasoning as needed.

Notes
