This Hamburger Potato Soup is a quick and easy weeknight meal that’s both comforting and delicious. Packed with ground beef, tender potatoes, and a rich, creamy broth, it’s a family-friendly dish that’s sure to satisfy.
Ingredients
– 1 lb ground beef
– 1 onion, diced
– 3 cloves garlic, minced
– 4 cups cubed potatoes
– 4 cups beef broth
– 2 cups milk
– 2 tbsp all-purpose flour
– 1 tsp dried thyme
– Salt and pepper to taste
Instructions
1. – In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned and crumbled, 5-7 minutes.
2. – Add the diced onion and minced garlic, and cook for an additional 2-3 minutes until fragrant.
3. – Stir in the cubed potatoes and beef broth. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes, until the potatoes are tender.
4. – In a small bowl, whisk together the milk and flour until smooth. Slowly pour the milk mixture into the pot, stirring constantly, and cook for 5 minutes until the soup has thickened.
5. – Stir in the dried thyme, and season with salt and pepper to taste.
6. – Serve hot and enjoy!
Notes
For a thicker soup, use an additional tablespoon of flour. You can also add in diced carrots or celery for extra veggies.
