Ingredients
– 2 cups all-purpose flour
– 1/2 cup unsweetened cocoa powder
– 1 teaspoon baking soda
– 1/4 teaspoon salt
– 1/2 cup unsalted butter, softened
– 1 1/4 cups granulated sugar
– 2 large eggs
– 1 teaspoon vanilla extract
– 1 cup buttermilk
– 1-2 tablespoons green food coloring
Instructions
1. Preheat oven to 350°F. Line a 12-cup muffin tin with paper liners.
2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
3. In a large bowl, beat the butter and sugar together until light and fluffy, about 2-3 minutes. Beat in the eggs one at a time, then stir in the vanilla.
4. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, mixing just until combined. Fold in the green food coloring, starting with 1 tablespoon and adding more to reach your desired shade of green.
5. Scoop the batter into the prepared muffin cups, filling them about 3/4 full.
6. Bake for 18-20 minutes, until a toothpick inserted in the center comes out clean. Allow to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
7. Frost the cooled cupcakes with your favorite cream cheese or buttercream frosting.
