Ingredients

– 2 cups all-purpose flour

– 1/2 cup granulated sugar

– 1 cup unsalted butter, softened

– 1 tablespoon grapefruit zest

– 1 tablespoon fresh thyme leaves


Instructions

1. Preheat your oven to 350°F (175°C).

2. In a large bowl, combine the all-purpose flour and granulated sugar.

3. Add the softened butter and use a pastry cutter or your fingers to work it into the flour mixture until it resembles coarse crumbs.

4. Stir in the grapefruit zest and fresh thyme leaves until well combined.

5. Gather the dough into a ball, wrap it in plastic, and refrigerate for 30 minutes.

6. On a lightly floured surface, roll out the dough to a thickness of about 1/4 inch.

7. Use a cookie cutter or a sharp knife to cut the dough into desired shapes, such as rounds or squares.

8. Arrange the cookies on a parchment-lined baking sheet, spacing them about 1 inch apart.

9. Bake for 10-12 minutes, or until the edges are lightly golden.

10. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For a more pronounced citrus flavor, you can add an extra teaspoon of grapefruit zest to the dough. If you prefer a softer texture, reduce the baking time by 2-3 minutes.
