– 1 teaspoon (5g) instant yeast
– 1 teaspoon (6g) salt
– 1 cup (240ml) warm water
– 2 tablespoons (30ml) olive oil, plus more for brushing
– 3 cloves garlic, minced
– 2 tablespoons (10g) fresh rosemary, chopped
Instructions
1. 1. In a large bowl, combine the flour, yeast, and salt. Add the warm water and olive oil, and mix until a shaggy dough forms.
2. 2. Turn the dough out onto a lightly floured surface and knead for about 5 minutes until smooth and elastic.
3. 3. Lightly grease a muffin tin with olive oil. Divide the dough into 12 equal pieces and place each piece into a muffin cup.
4. 4. Cover the muffin tin with a damp towel and let the dough rise for 30 minutes.
5. 5. Preheat the oven to 400°F (200°C).
6. 6. Brush the tops of the muffins with additional olive oil and sprinkle with the minced garlic and chopped rosemary.
7. 7. Bake for 15-18 minutes, or until the muffins are golden brown.
8. 8. Serve the Golden Crust Garlic Rosemary Focaccia Muffins warm, with a side of olive oil or herb dip for dipping.
Notes
For a more pronounced garlic flavor, you can increase the amount of minced garlic. If you prefer a chewier texture, let the dough rise for an additional 15-20 minutes before shaping and baking.
