Description

Ingredients

– 4 boneless, skinless chicken breasts

– 4 ounces goat cheese, softened

– 2 tablespoons fresh thyme, chopped

– 1 teaspoon salt

– 1/2 teaspoon black pepper

– 2 tablespoons olive oil

– 2 large onions, thinly sliced

– 2 cloves garlic, minced

– 2 tablespoons balsamic vinegar

– 1 tablespoon brown sugar


Instructions

1. Preheat oven to 375°F.

2. In a small bowl, mix together the goat cheese and 1 tablespoon of the chopped thyme. Season with 1/4 teaspoon each of salt and pepper.

3. Slice each chicken breast in half horizontally to create a pocket. Stuff each pocket with the goat cheese mixture.

4. Heat the olive oil in a large, oven-safe skillet over medium-high heat. Add the chicken and sear for 2-3 minutes per side until golden brown.

5. Transfer the skillet to the oven and bake for 15-18 minutes, until the chicken is cooked through.

6. In the same skillet, add the sliced onions and garlic. Cook for 10-12 minutes, stirring occasionally, until the onions are caramelized.

7. Stir in the balsamic vinegar and brown sugar. Cook for an additional 2-3 minutes.

8. Remove the chicken from the oven and top with the caramelized onions. Sprinkle with the remaining chopped thyme.

9. Serve immediately and enjoy!

Notes

For a creamier filling, you can mix the goat cheese with a tablespoon of cream cheese. The caramelized onions can be made in advance and reheated before serving.
