Description

Tender ginger lime pork nestled on a bed of creamy coconut rice – a flavorful and satisfying dinner that’s ready in just 20 minutes!


Ingredients

– 1 lb boneless pork tenderloin, cut into 1-inch pieces

– 2 tbsp olive oil

– 2 tbsp grated fresh ginger

– 2 tbsp lime juice

– 1 tsp lime zest

– 1 tsp brown sugar

– 1/2 tsp salt

– 1/4 tsp black pepper

– 1 cup uncooked jasmine rice

– 1 (13.5 oz) can coconut milk

– 1 cup water

– 1/4 tsp salt


Instructions

1. – In a large skillet, heat the olive oil over medium-high heat.

2. – Add the pork, ginger, lime juice, lime zest, brown sugar, salt, and pepper. Cook for 5-7 minutes, stirring frequently, until the pork is cooked through.

3. – In a saucepan, combine the jasmine rice, coconut milk, water, and 1/4 tsp salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender.

4. – Serve the ginger lime pork over the creamy coconut rice.

Notes

For extra flavor, you can also add a tablespoon of chopped fresh cilantro to the rice. Leftovers can be stored in the refrigerator for up to 3 days.
