Description

This nourishing Get Well Soup is packed with fresh vegetables, herbs, and a flavorful broth to help soothe and restore when you’re feeling under the weather. It’s a comforting classic that’s quick and easy to make at home.


Ingredients

– 2 tablespoons olive oil

– 1 onion, diced

– 3 cloves garlic, minced

– 2 carrots, peeled and sliced

– 2 stalks celery, sliced

– 8 cups chicken or vegetable broth

– 2 cups shredded cooked chicken (optional)

– 1 cup frozen peas

– 1 cup frozen corn

– 2 cups chopped kale or spinach

– 1 teaspoon dried thyme

– 1 bay leaf

– Salt and pepper to taste


Instructions

1. In a large pot or Dutch oven, heat the olive oil over medium heat.

2. Add the onion and garlic and sauté for 2-3 minutes until fragrant.

3. Add the carrots and celery and cook for 5 minutes, stirring occasionally.

4. Pour in the broth and bring to a simmer.

5. If using, add the cooked chicken.

6. Stir in the peas, corn, kale or spinach, thyme, and bay leaf.

7. Reduce heat and let the soup simmer for 15-20 minutes, until the vegetables are tender.

8. Season with salt and pepper to taste.

9. Serve hot, garnished with additional herbs if desired.

Notes

– For a thicker soup, you can add 1-2 tablespoons of cornstarch or flour mixed with a bit of broth.

– Try adding other veggies like potatoes, zucchini, or mushrooms.

– Garnish with crusty bread, crackers, or a dollop of sour cream or yogurt.
