Ingredients
– 3 large russet potatoes, peeled and grated
– 1 onion, grated
– 2 eggs, beaten
– 1/4 cup all-purpose flour
– 1 teaspoon salt
– 1/4 teaspoon black pepper
– 2 tablespoons vegetable oil, for frying
Instructions
1. 1. Squeeze excess moisture from the grated potatoes using a clean kitchen towel or cheesecloth.
2. 2. In a large bowl, combine the grated potatoes, onion, eggs, flour, salt, and pepper. Mix well.

4. 4. Scoop heaping tablespoons of the potato mixture and flatten slightly into pancakes.

Notes
