Ingredients
– 2 pounds russet potatoes, peeled and cut into chunks
– 1 cup all-purpose flour
– 2 large eggs
– 1 teaspoon salt
– 1/4 teaspoon freshly ground black pepper
Instructions
1. Bring a large pot of salted water to a boil. Add the potato chunks and cook until tender, about 15 minutes.
2. Drain the potatoes and let cool slightly. Using a potato ricer or masher, mash the potatoes until smooth.
3. In a large bowl, combine the mashed potatoes, flour, eggs, salt, and pepper. Knead the mixture until a soft dough forms.
4. Bring a large pot of salted water to a gentle simmer. Using a spoon or your hands, carefully drop heaping tablespoons of the potato dough into the simmering water.
5. Cook the dumplings for about 15-20 minutes, gently turning them occasionally, until they are cooked through and float to the surface.
6. Remove the dumplings from the water with a slotted spoon and serve immediately.
